BEEF AND SPINACH BAKE RECIPE

Ingredients:
1-10 oz frozen chopped spinach
vegetable cooking spray
1 pound ground chuck
1/2 cup thinly sliced celery
1/2 cup chopped onion
1/2 cup cooked long-grain rice
1 egg beaten
1/2 teaspoon salt
1/2 teaspoon dried whole thyme
1/2 cup shredded Cheddar cheese

First cook the spinach according to the package directions, drain well
and set aside.

Coat a large nonstick skillet with cooking spray. Add ground chuck, celery, and onion.
Cook over medium heat until browned, stirring to crumble meat. Drain well; pat dry
with paper towels.

Combine spinach, meat mixture, rice, the beaten egg, salt, dried whole thyme, and
pepper together in a mixing bowl. Mix well. Place mixture into a baking dish
that has been coated with vegetable spray. Bake, covered at 350
degrees for 20 minutes.

Remove from the oven and add cheese. Place back in the oven, uncovered,
and bake and additional 4 minutes or until cheese melts. Serve hot.
