BEEF WITH BROCCOLI RECIPE

Ingredients:

1 lb lean round steak
2 tablespoons dry sherry, divided
1 tablespoon plus 2 teaspoons cornstarch, divided
2 teaspoons sugar, divided
2 teaspoons sesame oil, divided
2 teaspoons soy sauce, divided
1 teaspoon salt, divided
1 lb fresh broccoli
1/2 cup chicken broth
1 tablespoon hoisin sauce
1/2 teaspoon ground white pepper
1 tablespoon safflower oil
1 tablespoon minced fresh gingerroot
2 teaspoons minced fresh garlic
1 medium-size sweet red pepper, cut into julienne strips
1 tablespoon sesame seeds, toasted

Start by partially freezing the steak, slice diagonally across grain into small strips.

Next, in a large bowl combine 1 tablespoon dry sherry, 2 teaspoons cornstarch,
1 teaspoon sugar, 1 teaspoon sesame oil, 1 teaspoon soy sauce, and 1/2 teaspoon salt.
Stir well. Add meat and toss gently, cover and marinate in refrigerator between 1 to 4 hours,
stirring occasionally.

Now wash the broccoli thoroughly and trim away any large leaves. Cut off the flowerets
of the broccoli and cut the stalks into 1/4 inch slices. Set aside until required.

Combine 1 tablespoon cornstarch and 1 tablespoon dry sherry in a small bowl; stir well.
Add chicken broth, hoisin sauce, 1 teaspoon sugar, 1 teaspoon sesame oil, 1 teaspoon
soy sauce, 1/2 teaspoon salt, and white pepper; stir well and save for later.

Heat a nonstick skillet to about 325 degrees. Add the safflower oil and allow to heat
1 minute. Add the gingerroot and garlic; stir- fry for 1/2 minute. Add beef and the marinade
the beef was in, stir- fry an additional 1 minute. Next add broccoli and sweet red pepper;
stir-fry for 2 more minutes. Add the cornstarch mixture, stirring constantly.

Cover skillet and reduce heat and cook 2 more minutes or until mixture is slightly
thickened. Sprinkle with sesame seeds and serve immediately.
