CHOCOLATE CHIP PUMPKIN CHEESECAKE RECIPE

1 cup vanilla wafer or sugar cookies crumbs
(about 25-30 cookies, crushed)
1/4 cup cocoa powder
1/4 cup powdered sugar
1/4 (1/2 stick) butter, melted
3 packages (8oz each) cream cheese softened
1 cup sugar
3 tablespoons all purpose flour
1 teaspoon ground pumpkin pie spice
1 cup canned pumpkin
4 eggs
1 cup chocolate chips or chocolate baking pieces

Heat oven to 350°F. Stir together the cookie crumbs, cocoa and powdered sugar in a large bowl. Add
melted butter. Press the cookie mixture into the bottom of a 9-inch springform pan and up the sides about 1/2 inch.
Bake for 8 minutes then remove from the oven.

Now increase oven temperature to 400°F. Beat cream cheese, sugar, flour and pumpkin pie spice in a large
bowl until well blended. Add eggs and the canned pumpkin. Blend well. Stir in chocolate chips; pour batter
into prepared crust. Bake 10 minutes.

Now reduce the heat to 250°F, continue baking for 55 to 60 minutes or until almost set. Remove from the oven
and place on a wire rack to cool. Using a knife, go around the inside of the pan to loosen the cake from the sides.
Cool completely. Refrigerate for about 4 1/2 hours before serving.

Garnish with whipped topping and chocolate chips or chocolate baking pieces. You can also add some crushed
