FUDGE COOKIES WITH WHITE CHOCOLATE RECIPE

12 ounces semisweet chocolate, finely chopped
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup ( 2 sticks) butter, softened
1 1/2 cups packed dark brown sugar
3 large eggs, at room temperature
2 teaspoons vanilla extract
4 ounces white chocolate, chopped
1 teaspoon vegetable oil

Preheat the oven to 300 degrees.

In a double boiler, melt the semisweet chocolate over hot, not boiling, water.
Set aside to slightly cool.

In a medium bowl, combine the flour, cocoa, baking soda,
and salt.

In a large bowl with an electric mixer, cream the butter and sugar. Beat in the eggs and
vanilla until just combined. Blend in the cooled semisweet chocolate. Blend in the flour
mixture until just combined.

Drop the dough by rounded tablespoons 2 inches apart onto an ungreased cookie sheet.
Bake for 18 to 22 minutes, or until set. Cool on the cookie sheet for 1 minute before transferring
them to wire racks to cool completely.

In a double boiler, melt the white chocolate with the oil over hot water. Set aside
to cool slightly.

7.
Dip a fork into the melt white chocolate and drizzle over the cookies. You can also use a wire
