IRISH CHOCOLATE MINT DESSERT RECIPE

1 1/2 cups (3 sticks plus 6 tablespoons) butter, divided
2 cups sugar
2 teaspoons vanilla extract
4 eggs
3/4 cup cocoa powder
1 cup self rising flour
2 2/3 cups powered sugar
1 tablespoon plus 1 teaspoon water
4 drops green food coloring
1 teaspoon mint extract
1 cup semi-sweet or milk chocolate chocolate chips

Heat oven to 350°F. Grease 13x9x2 inch baking pan.

In a large microwave safe bowl melt 1 cup (2 sticks) butter. Stir in sugar and vanilla. Add eggs
and beat well. Add flour and cocoa and beat until well blended. Pour batter into greased pans.

Bake 30 to 35 minutes or until wooden toothpick inserted in center comes out clean. Cool
completely on wire rack before adding mint cream mixture.

To prepare the mint cream, combine powdered sugar, 1/2 cup(1 stick) butter, water, mint extract
and food coloring. Beat the mixture until smooth. Spread evenly on the cake.

In a microwave safe bowl, place remaining 6 tablespoons butter and chocolate chips and
microwave them on high for 1 minute or until mixture is smooth after stirred. Cool slightly
before pouring over chilled mint cream cake. Cover and refrigerate at least 2 hours before serving.
