MADRAS POTATOES RECIPE

Ingredients:
2 lbs potatoes, peeled and cut into large chunks
2 tablespoons ghee or vegetable oil
2 teaspoon black mustard seeds
1 onion, sliced
3 garlic cloves, finely chopped
1 inch gingerroot, finely chopped
1 red chili, seeded and finely chopped
1 teaspoon ground cumin
½ teaspoon coriander

Directions:
Add the potatoes to a pot of salted boiling water. Boil for 5-7 minutes or until tender.
Drain the potatoes and set aside to cool.  Add the ghee or vegetable oil to a large skillet that
is set over a medium-high heat. Next add the mustard seeds and stir until they start to
crackle, approx. 1 minute. Now add the chopped onion and sauté, stirring frequently for
4-5 minutes. Add in the garlic, gingerroot, and the chili. Continue cooking until the
onion turns a golden color.

Now to the onion mixture, add the cumin and coriander and stir until
well blended.  Add the potatoes to the mixture and stir until well
