ONION BHAJI RECIPE - BHAJIAS

Ingredients:
1 cup besan or gram flour
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon baking soda
½ teaspoon chili powder
2 teaspoons lemon juice
2 tablespoon vegetable oil
2-6 tablespoons water
2 onions, sliced thin
2 teaspoon coriander seeds
oil for deep frying

Start by sifting the flour, salt, cumin, turmeric, baking soda, and chili powder together into a large bowl. Add the lemon juice and the 2 tablespoons oil. Stir in water one tablespoon water at a time until you reach a creamy batter. Next add the onions and also the coriander seeds to the batter mixture now.

Heat oil in a deep fryer, wok, or a heavy bottom pan until it reaches around 350˚F. Drop in spoonfuls of the onion mixture into the hot oil. Do not add too much at once. Cook for around 2-3 minutes and then turn the onions over and allow to cook again for another 2 minutes or so until a nice golden brown color.

Remove the hot bhajis from the oil and drain well on paper towels. Continue deep frying the rest of the bhaji mixture until you have them all fried.  While frying the next batch make sure to keep the previous ones warm as well.
