ITALIAN SAUSAGE AND BEAN CASSEROLE RECIPE

Ingredients:
8 Italian sausages
1 tbsp olive oil
1 large onion, chopped
2 garlic cloves, chopped
1 green bell pepper, seeded and cut into strips
1-14 oz can chopped tomatoes
2 tbsp sun-dried tomato paste
1-14 oz can white kidney beans

Start by making prick holes in the Italian sausages with a fork. Cook them under a preheated
broiler in the oven for about 10-12 minutes, turning occasionally until browned all over. Set
aside after cooked but keep warm.

Heat the olive oil in a large skillet or frying pan. Add onion, garlic and the green bell pepper
to the hot frying pan.

Cook for around 5 minutes, stirring occasionally, or until softened. Next add the tomatoes
to the frying pan and leave the mixture to simmer for around 5 minutes. Stir it occasionally
just until slightly reduced or thickened.

Stir in the sun-dried tomato paste next along with the white beans and the already cooked
Italian sausages. Cook for an additional 4-5 minutes or until the mixture is very hot.
Add about 4-5 tablespoons of water only if the mixture appears to dry during cooking. Add
some of the Italian sausage mixture to a serving dish. Can serve over a bed
