TUSCAN BEAN SALAD WITH TUNA RECIPE

Ingredients:

1 small white onion or 2 scallions, finely chopped
2-14 oz cans butter beans, drained
2 medium tomatoes, cut into wedges or strips
1-6 oz can drained tuna
2 tablespoons flat leaf parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons honey
1 garlic clove, crushed

Start by adding the chopped onions and butter beans to a bowl. Mix well to combine evenly.
Next add the tomatoes cut into wedges or strips to the bean and onion mixture.

Next after draining the tuna, flake the tuna with a fork and add it to the bean mixture also.
Add in the parsley next.

Now take a jar with a screw top and add the following: olive oil, lemon juice, honey, and garlic.
Put the lid onto the jar and shake the jar until the mixture thickens and emulsifies.

Pour the dressing from the jar onto the bean mixture. Toss the mixture together until all the
bean mixture is covered by the dressing. Serve.
