TRIPLE DECKER TORTILLA RECIPE

Ingredients:
1 cup canned refried beans
2 tablespoons sliced jalapeno peppers (optional)
1 cup salsa (hot or mild)
4  6-ounce corn tortillas
½ cup frozen whole-kernel corn (thawed)
½  cup shredded Monterey jack cheese
½  avocado, seeded, peeled, and chopped
1  tablespoon fresh cilantro leaves
Cooking spray

Directions:
Preheat oven to 450˚F. Using the cooking spray lightly coat an 8 or 9 inch pie pan. Add beans
and jalapeno peppers to a skillet and stir together until mixed well.  Place the bean mixture on a medium heat and cook while stirring for 2 minutes. Remove from heat and set aside until further needed.

In the pie pan spoon about ¼ cup of the salsa into the bottom. Now start layering the triple decker
tortilla by putting 1 tortilla over the salsa, then half of the warm bean mixture,  another tortilla, corn,
half of the cheese, ¼  cup more salsa, the third tortilla, remaining beans, remaining tortilla, and salsa. Cover with foil. Bake 12 minutes. Take out of the oven and sprinkle with remaining cheese.
Add back to the oven, and bake uncovered, 2 minutes more. Sprinkle with avocado
and cilantro. Serve immediately while hot.
