NOODLES WITH CHILI AND SHRIMP RECIPE

Ingredients:
9 oz thin glass noodles
2 tablespoons sunflower oil
1 onion, sliced
2 red chilies, seeded and very finely chopped
4 lime leaves, thinly shredded
1 tablespoon fresh cilantro
2 tablespoons superfine sugar
2 tablespoons fish sauce
1 lb raw jumbo shrimp, peeled

Add noodles to a large bowl and pour enough boiling water over the noodles to
cover them. Leave to stand for 5 minutes. Next drain thoroughly and set
aside until needed.

Heat the sunflower oil in a large preheated wok or skillet until it is hot.

Next add the onion, red chilies, and lime leaves to the skillet and
stir-fry for 1 minute.

Add in the cilantro, superfine sugar, fish sauce, and shrimp to the skillet and stir-fry
for a further 2 minutes or until the shrimp turn pink. If using already cooked shrimp
then only stir-fry the shrimp for 1 minute or just enough to heat through.

Next add the drained noodles to the skillet and toss to mix well. Leave on the heat
for another 1-2 minutes until thoroughly heated. Serve immediately.
