TUSCAN BEAN AND TUNA SALAD RECIPE

1 small onion, finely chopped
2-14 oz cans butter beans, drained
2 medium tomatoes, finely sliced
6 1/2 oz can tuna, drained
2 tablespoons parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons honey
1 garlic clove, minced

In a bowl add butter beans and chopped onions and mix well to combine. Next
slice the tomatoes into thin wedges and then add to the bean and onion mixture.
After draining the tuna, separate with a fork and add it to the bean mixture. Add parsley.

Mix together the olive oil, lemon juice, honey, and garlic and whisk until the
dressing emulsifies and thickens. Pour the dressing over the bean salad.
