ZESTY BAKED CATFISH RECIPE

Ingredients:

1/2 cup fine, dry breadcrumbs
1/2 teaspoon dried whole tarragon
1/4 teaspoon lemon and pepper seasoning
4 (4 ounce) catfish fillets
3 tablespoons French dressing
vegetable coking spray
1/4 cup shredded Swiss cheese

In a medium size bowl add breadcrumbs, tarragon, and lemon & pepper
seasoning. Stir well.

Brush catfish fillets with French Dressing; dredge in the breadcrumb
mixture.

Arrange fillets on a rack of a broiler pan that has been coated with cooking spray.
Bake, uncovered, at 450 degrees for about 10 minutes.

4.
Remove from the oven and sprinkle with the Swiss cheese. Add back to the
oven and bake an additional 2 minutes or until the fish flakes easily with a fork.
